The Benefit of Amazake

Amazake is a traditional Japanese fermented rice drink, often called “a drinkable IV” for its rich natural nutrients.
Through koji fermentation, rice transforms into a smooth, naturally sweet beverage filled with glucose, amino acids, B vitamins, and enzymes that support digestion, energy, skin health, and overall well-being.

At WA-LABO Kitchen, our Original Amazake contains no added sugar — only the gentle sweetness that comes naturally from rice and koji. For our flavored Amazake, we add a small amount of natural sugar or fruit purée to enhance the authentic taste of each fruit.

All are crafted with care to keep the balance between flavor, nourishment, and natural simplicity. It’s delicious warm or chilled, and perfect to enjoy on its own, in smoothies, or as a natural sweetener in cooking and baking.

What is "Koji"?

Koji is the heart of Japan’s traditional fermentation culture — a living culture of beneficial mold called Aspergillus oryzae, grown on rice, beans, or grains. It naturally transforms ingredients by bringing out sweetness, umami, and nutrients. Amazake, miso, soy sauce, and shio-koji all begin with Koji.

What does “WA-LABO KITCHEN” mean?

“WA” represents Japan (和), connection (輪), and Washington, where our journey began. “LABO” comes from “laboratory” — a place of exploration and creation. Together, it means “A kitchen laboratory connecting harmony, people, and fermentation.”
